  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons (30 ml)
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon (15 ml)
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. In a medium saucepan, heat the olive oil over medium heat and add the diced onion. Sauté until the onion becomes translucent, about 5 minutes.
  2. Add the minced garlic and thyme to the saucepan and sauté for an additional 1-2 minutes until fragrant.
  3. Stir in the chokecherries and chicken broth, then bring the mixture to a boil.
  4. Reduce the heat and let the soup simmer for about 15 minutes, allowing the flavors to meld together.
  5. Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender and blend until smooth, then return to the pot.
  6. Stir in the lemon juice, salt, and black pepper. Taste and adjust seasoning as needed.
  7. Serve hot, garnished with chopped cilantro.
