- Olive oil - 2 tablespoons (30 ml)
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon (15 ml)
- Cilantro - 2 tablespoons, chopped (for garnish)
Steps
- In a medium saucepan, heat the olive oil over medium heat and add the diced onion. Sauté until the onion becomes translucent, about 5 minutes.
- Add the minced garlic and thyme to the saucepan and sauté for an additional 1-2 minutes until fragrant.
- Stir in the chokecherries and chicken broth, then bring the mixture to a boil.
- Reduce the heat and let the soup simmer for about 15 minutes, allowing the flavors to meld together.
- Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender and blend until smooth, then return to the pot.
- Stir in the lemon juice, salt, and black pepper. Taste and adjust seasoning as needed.
- Serve hot, garnished with chopped cilantro.
