- Brown rice - 1 cup
- Chokecherries - 1/2 cup (fresh or frozen, pitted)
- Chicken or vegetable broth - 2 cups
- Olive oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped parsley - 2 tablespoons (for garnish)
Steps
- Rinse the brown rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional 1 minute until fragrant.
- Stir in the rinsed brown rice and toast it in the pan for 2 minutes, stirring frequently.
- Add the chicken or vegetable broth, chokecherries, thyme, salt, and black pepper to the saucepan. Bring to a boil.
- Once boiling, reduce heat to low, cover, and simmer for 30 minutes or until the rice is tender and has absorbed all the liquid.
- Remove from heat and let sit, covered, for 5 minutes. Fluff the rice with a fork.
- Serve warm, garnished with chopped parsley.
