Steps

  1. In a medium saucepan, combine the chokecherries and water over medium heat, stirring occasionally.
  2. Once the chokecherries have softened (about 10 minutes), remove from heat and mash the fruit with a fork or potato masher to release the juices.
  3. Strain the mixture through a fine mesh sieve to remove the skins and seeds, returning the juice to the saucepan.
  4. Add honey, lemon juice, and vanilla extract to the juice in the saucepan, stirring well to combine.
  5. Bring the mixture to a boil over medium-high heat, then reduce heat to low and let it simmer for about 15-20 minutes, stirring occasionally, until it thickens to your desired consistency.
  6. Remove from heat and let the jam cool slightly before transferring it to a clean jar for storage.
