Ingredients
- Chokecherries - 2 cups, pitted
- Honey - 1/2 cup
- Lemon juice - 2 tablespoons
- Water - 1/4 cup
- Vanilla extract - 1 teaspoon
Steps
- In a medium saucepan, combine the chokecherries and water over medium heat, stirring occasionally.
- Once the chokecherries have softened (about 10 minutes), remove from heat and mash the fruit with a fork or potato masher to release the juices.
- Strain the mixture through a fine mesh sieve to remove the skins and seeds, returning the juice to the saucepan.
- Add honey, lemon juice, and vanilla extract to the juice in the saucepan, stirring well to combine.
- Bring the mixture to a boil over medium-high heat, then reduce heat to low and let it simmer for about 15-20 minutes, stirring occasionally, until it thickens to your desired consistency.
- Remove from heat and let the jam cool slightly before transferring it to a clean jar for storage.
