- Fresh dill - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Black pepper - to taste
- Pine nuts - 2 tablespoons, toasted (optional)
Steps
- In a mixing bowl, combine coconut flour and salt. Create a well in the center and add eggs and olive oil. Mix until a dough forms.
- Knead the dough for about 5 minutes until it becomes smooth. Wrap it in plastic wrap and let it rest for 10 minutes.
- Roll out the dough on a lightly floured surface (using coconut flour) until it's about 1/8 inch thick. Cut into fettuccine strips using a sharp knife or pasta cutter.
