  • Flaxseed meal - 2 tablespoons
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Water - 1/4 cup
  • Salt - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Zucchini - 1 medium, thinly sliced
  • Cherry tomatoes - 1/2 cup, halved
  • Red onion - 1/4 medium, thinly sliced
  • Fresh basil - 1/4 cup, chopped
  • Balsamic vinegar - 1 tablespoon
  • Pecans - 1/4 cup, roughly chopped

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the pecan flour, almond flour, flaxseed meal, salt, and garlic powder.
  3. Add the egg, olive oil, and water to the dry ingredients, and mix until a dough forms.
  4. Transfer the dough to the prepared baking sheet and press it into a round pizza shape, about 1/4 inch thick.
  5. Bake the crust in the preheated oven for 10-12 minutes, or until lightly golden.
  6. While the crust is baking, prepare the toppings by tossing the zucchini, cherry tomatoes, and red onion in a bowl with balsamic vinegar and a pinch of salt.
  7. Once the crust is done, remove it from the oven and evenly distribute the vegetable mixture over the top.
  8. Sprinkle the chopped pecans and fresh basil over the vegetables.
  9. Return the pizza to the oven and bake for an additional 10-15 minutes, or until the vegetables are tender.
  10. Allow the pizza to cool for a few minutes before slicing and serving.
