  • Arrowroot powder - 2 tablespoons
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Zucchini - 1 small, diced
  • Bell pepper - 1/2, diced
  • Spinach - 1 cup, fresh
  • Cherry tomatoes - 1/2 cup, halved
  • Fresh basil - 1 tablespoon, chopped

Steps

  1. In a food processor, combine the fresh corn kernels, almond flour, arrowroot powder, egg, and salt. Blend until a smooth dough forms.
  2. Transfer the dough onto a lightly floured surface and knead gently until fully combined. Let it rest for 10 minutes.
  3. Roll out the dough to about 1/4 inch thickness and cut into desired pasta shapes (like fettuccine or tagliatelle).
  4. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add the diced zucchini and bell pepper to the skillet, cooking for 3-4 minutes until softened.
  6. Add the cherry tomatoes and spinach, cooking for an additional 2-3 minutes until the spinach wilts.
  7. In a pot of boiling water, add the freshly made corn pasta and cook for 3-4 minutes until they float to the surface.
  8. Drain the pasta and toss it into the skillet with the sautéed vegetables. Add chopped basil and black pepper to taste.
  9. Serve immediately, garnished with extra basil if desired.
