- dark chocolate (70% cocoa) - 100 grams
- unsalted butter - 30 grams (plus extra for greasing)
- granulated sugar - 50 grams (plus extra for coating)
- large eggs - 2 (separated into yolks and whites)
- vanilla extract - 1 teaspoon
- salt - a pinch
Steps
- Preheat your oven to 190°C (375°F). Grease two ramekins with butter and coat them with granulated sugar, shaking out the excess.
- Melt the dark chocolate and butter together in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.
- In a separate bowl, whisk the egg yolks with 25 grams of granulated sugar and vanilla extract until pale and creamy.
- Fold the melted chocolate mixture into the egg yolk mixture until well combined.
- In another clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining 25 grams of sugar and continue to beat until stiff peaks form.
- Gently fold one-third of the whipped egg whites into the chocolate mixture to lighten it. Then, carefully fold in the remaining egg whites in two additions, being careful not to deflate the mixture.
- Spoon the soufflé mixture into the prepared ramekins, filling them to the rim. Smooth the tops with a spatula.
- Place the ramekins on a baking tray and bake in the preheated oven for 12-15 minutes, or until the soufflés have risen and have a slightly set top.
- Remove from the oven and serve immediately, dusted with powdered sugar if desired.
