  • Vegetable oil - 30 milliliters
  • Unsweetened applesauce - 30 milliliters
  • Vanilla extract - 1/2 teaspoon
  • Milk - 60 milliliters
  • Fresh raspberries - 50 grams
  • Powdered sugar - 20 grams
  • Dark chocolate (70% cocoa) - 30 grams

Steps

  1. Preheat the oven to 180°C (350°F) and grease two 10 cm (4 inch) round cake pans.
  2. In a mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix oil, applesauce, vanilla extract, and milk until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter evenly between the prepared cake pans and smooth the tops.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  8. In a small bowl, mash the fresh raspberries with powdered sugar to create a chunky filling.
  9. Once the cakes are cooled, place one layer on a serving plate and spread half of the raspberry filling over the top.
  10. Place the second layer on top and spread the remaining raspberry filling on top.
  11. Melt the dark chocolate in a microwave or double boiler and drizzle it over the cake before serving.
