Steps

  1. Preheat your oven to 120°C (250°F) and line a baking sheet with parchment paper.
  2. In a clean, dry bowl, whisk the egg whites until soft peaks form. Gradually add the granulated sugar, one tablespoon at a time, until the mixture is glossy and holds stiff peaks.
  3. Sift the cocoa powder and cornstarch over the meringue, then gently fold in the melted dark chocolate and white vinegar until just combined.
  4. Spoon the meringue mixture onto the prepared baking sheet, shaping it into a round disc with a slight indentation in the center.
