Ingredients
- Egg whites - 2 large
- Granulated sugar - 100 grams
- Cocoa powder - 10 grams
- Cornstarch - 5 grams
- White vinegar - 5 ml
- Dark chocolate (melted) - 30 grams
- Heavy cream - 100 ml
- Powdered sugar - 10 grams
- Fresh berries (e.g., strawberries, raspberries) - 50 grams
Steps
- Preheat your oven to 120°C (250°F) and line a baking sheet with parchment paper.
- In a clean, dry bowl, whisk the egg whites until soft peaks form. Gradually add the granulated sugar, one tablespoon at a time, until the mixture is glossy and holds stiff peaks.
- Sift the cocoa powder and cornstarch over the meringue, then gently fold in the melted dark chocolate and white vinegar until just combined.
- Spoon the meringue mixture onto the prepared baking sheet, shaping it into a round disc with a slight indentation in the center.
- Bake in the preheated oven for 50-60 minutes, or until the pavlova is dry and crisp on the outside but still soft in the center. Turn off the oven and leave the pavlova inside to cool completely.
- In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form.
- Once the pavlova is completely cool, carefully transfer it to a serving plate, dollop the whipped cream in the center, and top with fresh berries.
