Ingredients

  • Dark chocolate (85% or higher) - 50g
  • Unsalted butter - 30g
  • Eggs - 2 large
  • Erythritol (or preferred low-carb sweetener) - 2 tablespoons
  • Almond flour - 2 tablespoons
  • Cocoa powder (unsweetened) - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 200°C (400°F) and grease two ramekins with butter.
  2. In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Heat in 30-second increments, stirring in between, until melted and smooth.
  3. In a separate bowl, whisk together the eggs and erythritol until well combined and slightly frothy.
  4. Add the melted chocolate mixture, vanilla extract, and a pinch of salt to the egg mixture, and stir until fully incorporated.
  5. Gently fold in the almond flour and cocoa powder until just combined, being careful not to overmix.
  6. Divide the batter evenly between the prepared ramekins.
  7. Bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still slightly soft.
  8. Remove from the oven and let sit for 1 minute before carefully inverting onto plates.
  9. Serve warm, optionally topped with whipped cream or low-carb ice cream.
