Chocolate Eclairs

Ingredients

  • All-purpose flour - 100 g
  • Unsalted butter - 50 g
  • Water - 120 ml
  • Eggs - 2 large
  • Granulated sugar - 1 tbsp
  • Salt - 1/4 tsp
  • Heavy cream - 200 ml
  • Powdered sugar - 30 g
  • Vanilla extract - 1 tsp
  • Dark chocolate - 50 g
  • Milk - 2 tbsp

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.
  3. Once boiling, remove from heat and quickly stir in the flour until a dough forms.
  4. Return the saucepan to low heat, stirring constantly for about 1-2 minutes to dry out the dough slightly.
  5. Transfer the dough to a mixing bowl and let it cool for a few minutes.
  6. Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
  7. Spoon the dough into a piping bag fitted with a large round tip.
  8. Pipe 10 cm long strips onto a lined baking sheet, leaving space between each.
  9. Bake for 20-25 minutes or until golden brown and puffed up.
  10. Remove from the oven and let them cool completely on a wire rack.
  11. While the eclairs cool, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  12. Once eclairs are cool, use a small knife to make a slit in the side and fill with whipped cream using a piping bag.
  13. For the chocolate glaze, melt the dark chocolate with milk in a microwave or double boiler until smooth.
  14. Dip the tops of the filled eclairs into the chocolate glaze and let them set on a wire rack.
  15. Serve immediately or refrigerate until ready to serve.
