Ingredients

  • Graham cracker crumbs - 1 cup

  • Milk - 240 ml
  • Heavy cream - 120 ml
  • Semi-sweet chocolate, chopped - 100 grams
  • Egg yolk - 1 large
  • Cornstarch - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Whipped cream (for topping) - 60 ml

Steps

  1. Preheat the oven to 175°C (350°F).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar until well mixed.
  3. Press the mixture into the bottom and sides of a small pie dish to form the crust.
  4. Bake the crust in the preheated oven for 8-10 minutes until slightly golden. Allow to cool.
  5. In a saucepan, heat the milk and heavy cream over medium heat until just simmering.
  6. In a separate bowl, whisk together the egg yolk, cornstarch, and a pinch of salt until smooth.
  7. Gradually add the hot milk mixture to the egg mixture while whisking continuously to temper the eggs.
  8. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened (about 5-7 minutes).
  9. Remove from heat and stir in the chopped chocolate and vanilla extract until the chocolate is fully melted and the mixture is smooth.
  10. Pour the chocolate filling into the cooled crust and smooth the top with a spatula.
  11. Refrigerate for at least 2 hours until set.
