- Maple syrup - 60 ml
- Coconut oil - 30 grams, melted
- Vanilla extract - 1 teaspoon
- Dark dairy-free chocolate chips - 50 grams
- Chickpeas - 60 grams, cooked and drained
- Peanut butter - 15 grams
- Brown sugar - 30 grams
- Almond milk - 1 tablespoon
- Dairy-free chocolate chips - 30 grams
Steps
- Preheat your oven to 180°C (350°F) and grease a small baking dish (approximately 20cm x 20cm).
- In a mixing bowl, combine almond flour, cocoa powder, baking soda, and salt for the brownie base.
- In another bowl, whisk together maple syrup, melted coconut oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the dark dairy-free chocolate chips.
- Spread the brownie batter evenly in the prepared baking dish and bake for 15-18 minutes, until set but still fudgy. Remove from the oven and let cool slightly.
- In a food processor, blend the cooked chickpeas, peanut butter, brown sugar, almond milk, and a pinch of salt until smooth and creamy to create the cookie dough.
- Once the brownies have cooled, spread the cookie dough mixture evenly on top of the brownies.
- Sprinkle the dairy-free chocolate chips over the cookie dough layer and refrigerate for at least 10 minutes to set.
