  • Almond flour - 30 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Brown sugar - 80 grams
  • Granulated sugar - 20 grams
  • Almond extract - 1 teaspoon
  • Egg - 1 large
  • Dairy-free chocolate chips - 50 grams
  • Water - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
  3. In another bowl, combine the brown sugar, granulated sugar, and almond extract. Mix in the egg and water until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the dairy-free chocolate chips.
  5. Transfer the dough to a floured surface and shape it into a log about 25 cm (10 inches) long and 5 cm (2 inches) wide.
  6. Place the log on the prepared baking sheet and bake for 25 minutes, or until slightly golden.
  7. Remove from the oven and let cool for 10 minutes. Then, slice the log diagonally into 1 cm (1/2 inch) thick pieces.
  8. Lay the slices cut side down on the baking sheet and bake for an additional 10 minutes, flipping halfway through until crisp.
