- Almond flour - 30 grams
- Baking powder - 1 teaspoon
- Salt - 1/4 teaspoon
- Brown sugar - 80 grams
- Granulated sugar - 20 grams
- Almond extract - 1 teaspoon
- Egg - 1 large
- Dairy-free chocolate chips - 50 grams
- Water - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
- In another bowl, combine the brown sugar, granulated sugar, and almond extract. Mix in the egg and water until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the dairy-free chocolate chips.
- Transfer the dough to a floured surface and shape it into a log about 25 cm (10 inches) long and 5 cm (2 inches) wide.
- Place the log on the prepared baking sheet and bake for 25 minutes, or until slightly golden.
- Remove from the oven and let cool for 10 minutes. Then, slice the log diagonally into 1 cm (1/2 inch) thick pieces.
- Lay the slices cut side down on the baking sheet and bake for an additional 10 minutes, flipping halfway through until crisp.
