- All-purpose flour - 250 grams
- Granulated sugar - 50 grams
- Active dry yeast - 5 grams
- Salt - 5 grams
- Whole milk - 100 milliliters, warmed
- Unsalted butter - 50 grams, melted and cooled
- Large egg - 1, beaten
- Bittersweet chocolate - 100 grams, chopped
- Unsweetened cocoa powder - 15 grams
- Powdered sugar - 10 grams (for dusting)
Steps
- In a large bowl, combine warm milk, yeast, and 10 grams of sugar. Allow it to sit for about 5 minutes until foamy.
- Add the melted butter, beaten egg, remaining sugar, and salt to the yeast mixture. Mix well.
- Gradually add the flour to the mixture, stirring until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- While the dough is rising, prepare the chocolate filling by melting the chopped bittersweet chocolate in a microwave or double boiler, then mix in the cocoa powder until smooth.
- Once the dough has risen, punch it down and roll it out into a rectangle about 30x25 cm on a floured surface.
- Spread the chocolate filling evenly over the dough, leaving a small border around the edges.
- Roll the dough tightly from the long side to form a log, then slice the log in half lengthwise to expose the filling.
- Twist the two halves together and place it into a greased loaf pan. Cover and let it rise for another 30 minutes.
- Preheat the oven to 180°C (350°F). Bake the babka for 30-35 minutes until golden brown.
- Allow it to cool slightly before dusting with powdered sugar and slicing to serve.
