Ingredients
- large eggs - 4
- fresh chives, chopped - 2 tablespoons
- shredded cheese (cheddar or your choice) - 1/2 cup
- salt - 1/4 teaspoon
- black pepper - 1/4 teaspoon
- butter - 1 tablespoon
Steps
- In a medium bowl, crack the eggs and whisk them together with salt, black pepper, and chopped chives until well combined.
- Heat a non-stick skillet over medium heat and add the butter, allowing it to melt and coat the bottom of the pan.
- Pour the egg mixture into the skillet, tilting the pan to ensure the eggs spread evenly.
- Cook for about 2-3 minutes until the edges start to set, using a spatula to gently lift the edges and allow uncooked eggs to flow underneath.
- Once the eggs are mostly set but still slightly runny on top, sprinkle the shredded cheese over one half of the omelette.
- Carefully fold the other half over the cheese and let it cook for another minute until the cheese melts and the omelette is cooked through.
- Slide the omelette onto a plate and garnish with additional chives if desired. Serve hot.
