Ingredients

  • large eggs - 4
  • fresh chives, chopped - 2 tablespoons
  • shredded cheese (cheddar or your choice) - 1/2 cup
  • salt - 1/4 teaspoon
  • black pepper - 1/4 teaspoon
  • butter - 1 tablespoon

Steps

  1. In a medium bowl, crack the eggs and whisk them together with salt, black pepper, and chopped chives until well combined.
  2. Heat a non-stick skillet over medium heat and add the butter, allowing it to melt and coat the bottom of the pan.
  3. Pour the egg mixture into the skillet, tilting the pan to ensure the eggs spread evenly.
  4. Cook for about 2-3 minutes until the edges start to set, using a spatula to gently lift the edges and allow uncooked eggs to flow underneath.
  5. Once the eggs are mostly set but still slightly runny on top, sprinkle the shredded cheese over one half of the omelette.
  6. Carefully fold the other half over the cheese and let it cook for another minute until the cheese melts and the omelette is cooked through.
  7. Slide the omelette onto a plate and garnish with additional chives if desired. Serve hot.
