  • Black beans - 100 grams, drained and rinsed
  • Quinoa - 50 grams, cooked
  • Chipotle in adobo sauce - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Onion powder - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Pepper - 1/4 teaspoon
  • Ground flaxseed - 1 tablespoon
  • Water - 3 tablespoons
  • Olive oil - 1 tablespoon
  • Whole wheat burger buns - 2
  • Avocado - 1, sliced
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the sweet potato into small cubes, then toss them in olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes or until tender.

  6. Toast the whole wheat burger buns in the skillet for about 1-2 minutes until lightly browned.
