Ingredients
- Lentils - 1 cup (200g)
- Water - 2 cups (480ml)
- Chipotle in adobo sauce - 1 tablespoon (15g), minced
- Garlic powder - 1 teaspoon (5g)
- Onion powder - 1 teaspoon (5g)
- Cumin - 1 teaspoon (5g)
- Smoked paprika - 1 teaspoon (5g)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
- Breadcrumbs (gluten-free if needed) - 1/2 cup (50g)
- Olive oil - 2 tablespoons (30ml)
- Burger buns - 2
- Avocado - 1/2, sliced
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
Steps
- Rinse the lentils under cold water and place them in a saucepan with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until tender.
- Drain any excess water from the lentils and transfer them to a mixing bowl. Mash them lightly with a fork, leaving some texture.
- Add the minced chipotle, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper to the mashed lentils. Mix well to combine.
- Stir in the breadcrumbs until the mixture holds together. If it feels too wet, add a little more breadcrumbs.
- Form the lentil mixture into 2 equal patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, toast the burger buns in the remaining olive oil until lightly browned.
- Assemble the sliders by placing the lentil patties on the buns, topped with lettuce, sliced avocado, and tomato.
