Ingredients

  • Lentils - 1 cup (200g)
  • Water - 2 cups (480ml)
  • Chipotle in adobo sauce - 1 tablespoon (15g), minced
  • Garlic powder - 1 teaspoon (5g)
  • Onion powder - 1 teaspoon (5g)
  • Cumin - 1 teaspoon (5g)
  • Smoked paprika - 1 teaspoon (5g)
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)
  • Breadcrumbs (gluten-free if needed) - 1/2 cup (50g)
  • Olive oil - 2 tablespoons (30ml)
  • Burger buns - 2
  • Avocado - 1/2, sliced
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced

Steps

  1. Rinse the lentils under cold water and place them in a saucepan with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until tender.
  2. Drain any excess water from the lentils and transfer them to a mixing bowl. Mash them lightly with a fork, leaving some texture.
  3. Add the minced chipotle, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper to the mashed lentils. Mix well to combine.
  4. Stir in the breadcrumbs until the mixture holds together. If it feels too wet, add a little more breadcrumbs.
  5. Form the lentil mixture into 2 equal patties.
  6. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
  7. While the patties are cooking, toast the burger buns in the remaining olive oil until lightly browned.
  8. Assemble the sliders by placing the lentil patties on the buns, topped with lettuce, sliced avocado, and tomato.
  9. Serve immediately and enjoy your Chipotle Lentil Sliders!
