Ingredients

  • Portobello mushrooms - 2 large
  • Chipotle in adobo sauce - 2 tablespoons
  • BBQ sauce (dairy-free) - 1/4 cup
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro (for garnish) - 2 tablespoons, chopped

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a bowl, mix the chipotle in adobo sauce, BBQ sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper to create the marinade.
  3. Remove the stems from the portobello mushrooms and gently wipe them clean with a damp cloth.
  4. Place the mushrooms in the bowl with the marinade, making sure they are well coated. Let them marinate for at least 15 minutes.
  5. Once marinated, place the mushrooms gill-side down on the grill. Grill for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
