- Onion powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro (for garnish) - 2 tablespoons, chopped
Steps
- Preheat your grill or grill pan over medium-high heat.
- In a bowl, mix the chipotle in adobo sauce, BBQ sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper to create the marinade.
- Remove the stems from the portobello mushrooms and gently wipe them clean with a damp cloth.
- Place the mushrooms in the bowl with the marinade, making sure they are well coated. Let them marinate for at least 15 minutes.
- Once marinated, place the mushrooms gill-side down on the grill. Grill for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
