Ingredients

  • Cauliflower - 1 medium head

  • Black pepper - 1/2 teaspoon
  • Chipotle in adobo sauce - 2 tablespoons, minced
  • Ketchup - 1/4 cup
  • Brown sugar - 1 tablespoon
  • Apple cider vinegar - 1 tablespoon
  • Water - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into bite-sized florets and place them in a large bowl.
  3. In a small bowl, mix olive oil, smoked paprika, garlic powder, salt, and black pepper.
  4. Drizzle the olive oil mixture over the cauliflower and toss until evenly coated.
  5. Spread the cauliflower florets on a baking sheet lined with parchment paper.
  6. Roast the cauliflower in the preheated oven for 20 minutes, or until tender and slightly crispy.
  7. While the cauliflower is roasting, prepare the chipotle BBQ sauce by combining minced chipotle, ketchup, brown sugar, apple cider vinegar, and water in a small saucepan over medium heat.
  8. Stir the sauce until it comes to a simmer, then reduce the heat and let it cook for 5 minutes, stirring occasionally.
  9. Once the cauliflower is done roasting, remove it from the oven and toss it in the chipotle BBQ sauce until well coated.
  10. Return the sauced cauliflower to the oven and bake for an additional 5 minutes.
  11. Serve hot, garnished with fresh cilantro if desired.
