Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into bite-sized florets and place them in a large bowl.
- In a small bowl, mix olive oil, smoked paprika, garlic powder, salt, and black pepper.
- Drizzle the olive oil mixture over the cauliflower and toss until evenly coated.
- Spread the cauliflower florets on a baking sheet lined with parchment paper.
- Roast the cauliflower in the preheated oven for 20 minutes, or until tender and slightly crispy.
- While the cauliflower is roasting, prepare the chipotle BBQ sauce by combining minced chipotle, ketchup, brown sugar, apple cider vinegar, and water in a small saucepan over medium heat.
- Stir the sauce until it comes to a simmer, then reduce the heat and let it cook for 5 minutes, stirring occasionally.
- Once the cauliflower is done roasting, remove it from the oven and toss it in the chipotle BBQ sauce until well coated.
