Ingredients

  • Whole wheat macaroni - 150 grams
  • Ground turkey - 200 grams
  • Canned kidney beans - 1 cup, drained and rinsed
  • Canned diced tomatoes - 1 cup
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Chili powder - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cheddar cheese - 100 grams, shredded
  • Greek yogurt - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Water - 1 cup

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large pot, cook the whole wheat macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  4. Add the ground turkey to the skillet and cook until browned, about 5-7 minutes. Make sure to break up the turkey into crumbles.
  5. Stir in the chili powder, cumin, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.
  6. Add the canned diced tomatoes and kidney beans to the skillet, followed by 1 cup of water. Bring to a simmer and cook for about 5 minutes.
  7. Combine the cooked macaroni with the turkey chili mixture, mixing well to ensure everything is evenly coated.
  8. Transfer the mixture into a baking dish and sprinkle the shredded cheddar cheese on top.
  9. Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden.
  10. Remove from the oven and let it cool for a few minutes before serving. Top each serving with a dollop of Greek yogurt.
