- Ground turkey - 200 grams
- Canned kidney beans - 1 cup, drained and rinsed
- Canned diced tomatoes - 1 cup
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Chili powder - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cheddar cheese - 100 grams, shredded
- Greek yogurt - 2 tablespoons
- Olive oil - 1 tablespoon
- Water - 1 cup
Steps
- Preheat your oven to 180°C (350°F).
- In a large pot, cook the whole wheat macaroni according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground turkey to the skillet and cook until browned, about 5-7 minutes. Make sure to break up the turkey into crumbles.
- Stir in the chili powder, cumin, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.
- Add the canned diced tomatoes and kidney beans to the skillet, followed by 1 cup of water. Bring to a simmer and cook for about 5 minutes.
- Combine the cooked macaroni with the turkey chili mixture, mixing well to ensure everything is evenly coated.
- Transfer the mixture into a baking dish and sprinkle the shredded cheddar cheese on top.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes before serving. Top each serving with a dollop of Greek yogurt.
