- Mozzarella cheese, shredded - 150 grams
- Parmesan cheese, grated - 30 grams
- Egg - 1 large
- Almond flour - 30 grams
- Chili seasoning - 1 tablespoon
- Ground beef (or turkey) - 150 grams
- Canned diced tomatoes - 200 grams
- Red onion, finely chopped - 50 grams
- Bell pepper, diced - 50 grams
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cheddar cheese, shredded - 50 grams
- Fresh cilantro, chopped (for garnish) - 2 tablespoons
Steps
- Preheat the oven to 220°C (425°F).
- Wash and chop the cauliflower into florets, then steam until tender (about 10 minutes).
- Transfer the steamed cauliflower to a food processor and pulse until it resembles rice. Let it cool slightly.
- In a bowl, combine the processed cauliflower, 100 grams of mozzarella cheese, Parmesan cheese, egg, almond flour, salt, and pepper. Mix until well combined.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust. Bake for 15-20 minutes until golden and firm.
- In a skillet, heat olive oil over medium heat. Add chopped red onion and bell pepper, sautéing until softened (about 5 minutes).
- Add the ground beef (or turkey) and chili seasoning to the skillet, cooking until browned (about 5-7 minutes). Stir in the canned diced tomatoes and simmer for 5 minutes.
- Remove the crust from the oven and spread the chili mixture evenly over the top. Sprinkle with the remaining mozzarella and cheddar cheese.
- Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Once done, remove from the oven and let it cool slightly. Garnish with fresh cilantro before slicing and serving.
