Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese, shredded - 150 grams
  • Parmesan cheese, grated - 30 grams
  • Egg - 1 large
  • Almond flour - 30 grams
  • Chili seasoning - 1 tablespoon
  • Ground beef (or turkey) - 150 grams
  • Canned diced tomatoes - 200 grams
  • Red onion, finely chopped - 50 grams
  • Bell pepper, diced - 50 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cheddar cheese, shredded - 50 grams
  • Fresh cilantro, chopped (for garnish) - 2 tablespoons

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Wash and chop the cauliflower into florets, then steam until tender (about 10 minutes).
  3. Transfer the steamed cauliflower to a food processor and pulse until it resembles rice. Let it cool slightly.
  4. In a bowl, combine the processed cauliflower, 100 grams of mozzarella cheese, Parmesan cheese, egg, almond flour, salt, and pepper. Mix until well combined.
  5. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust. Bake for 15-20 minutes until golden and firm.
  6. In a skillet, heat olive oil over medium heat. Add chopped red onion and bell pepper, sautéing until softened (about 5 minutes).
  7. Add the ground beef (or turkey) and chili seasoning to the skillet, cooking until browned (about 5-7 minutes). Stir in the canned diced tomatoes and simmer for 5 minutes.
  8. Remove the crust from the oven and spread the chili mixture evenly over the top. Sprinkle with the remaining mozzarella and cheddar cheese.
  9. Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Once done, remove from the oven and let it cool slightly. Garnish with fresh cilantro before slicing and serving.
