Ingredients

  • Corn tortillas - 4 large

  • Green salsa (store-bought or homemade) - 1 cup
  • Black beans (canned, drained, and rinsed) - 1/2 cup
  • Cotija cheese (crumbled) - 1/4 cup
  • Avocado (sliced) - 1 medium
  • Fresh cilantro (chopped) - 2 tablespoons
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the corn tortillas into quarters to form chips.
  3. In a large mixing bowl, toss the tortilla quarters with olive oil, salt, and pepper until evenly coated.
  4. Spread the tortilla chips on a baking sheet in a single layer and bake for 10-12 minutes or until golden and crispy.
  5. While the chips are baking, heat the green salsa in a saucepan over medium heat for about 5 minutes until warmed through.
  6. Once the chips are done, remove them from the oven and place them in a serving dish.
  7. Pour the warmed green salsa over the tortilla chips, then sprinkle with black beans and crumbled Cotija cheese.
  8. Top with sliced avocado and chopped cilantro, and serve immediately with lime wedges on the side.
