  • Vegan mayonnaise - 3 tablespoons
  • Dijon mustard - 1 tablespoon
  • Celery - 1 stalk, finely chopped
  • Red onion - 1/4 medium, finely chopped
  • Pickles - 2 tablespoons, finely chopped
  • Lemon juice - 1 tablespoon
  • Fresh dill - 1 tablespoon, chopped (or 1 teaspoon dried dill)
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/4 teaspoon
  • Mixed greens - 2 cups (for serving)

Steps

  1. In a large mixing bowl, mash the drained chickpeas with a fork or potato masher until slightly chunky.
  2. Add the vegan mayonnaise, Dijon mustard, chopped celery, red onion, pickles, lemon juice, dill, salt, black pepper, and paprika to the bowl.
