  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4 small
  • Avocado - 1 medium, sliced
  • Red onion - 1/2 small, diced
  • Cherry tomatoes - 1 cup, halved
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Hot sauce (optional) - to taste

Steps

  1. Preheat a skillet over medium heat and add olive oil.
  2. Rinse and drain the chickpeas, then add them to the skillet.
  3. Sprinkle ground cumin, smoked paprika, garlic powder, salt, and black pepper over the chickpeas.
  4. Cook for about 8-10 minutes, stirring occasionally, until the chickpeas are heated through and slightly crispy.
  5. While the chickpeas are cooking, warm the corn tortillas in a separate pan or microwave for about 30 seconds.
  6. Assemble the tacos by placing a generous spoonful of chickpeas on each tortilla.
  7. Top with sliced avocado, diced red onion, halved cherry tomatoes, and chopped cilantro.
  8. Drizzle lime juice over the top and add hot sauce if desired.
