  • cooked chickpeas - 1 cup
  • bulgur wheat - 1/2 cup
  • water - 1 cup
  • fresh parsley - 1/2 cup, chopped
  • fresh mint - 1/4 cup, chopped
  • cherry tomatoes - 1/2 cup, diced
  • cucumber - 1/2 cup, diced
  • red onion - 1/4 cup, finely chopped
  • lemon juice - 2 tablespoons
  • olive oil - 2 tablespoons
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon

Steps

  1. In a small pot, bring 1 cup of water to a boil. Add bulgur wheat, cover, and remove from heat. Let it sit for about 10 minutes until the water is absorbed and the bulgur is tender.
  2. In a large mixing bowl, combine the cooked chickpeas, chopped parsley, chopped mint, diced cherry tomatoes, diced cucumber, and finely chopped red onion.
  3. Once the bulgur is ready, fluff it with a fork and add it to the mixing bowl with the other ingredients.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the salad mixture and toss gently to combine all ingredients evenly.
