- Canned chickpeas - 1 can (400g)
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Bay leaf - 1
- Fresh spinach - 100g
- Lemon - 1, juiced
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, garlic, carrot, and celery, and sauté for 5-7 minutes until the vegetables are softened.
- Stir in the ground cumin and paprika, cooking for another 1-2 minutes until fragrant.
- Add the canned chickpeas (drained and rinsed), vegetable broth, salt, black pepper, and bay leaf to the pot.
- Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes.
- Remove the bay leaf, and stir in the fresh spinach until wilted.
- Add the lemon juice, and adjust seasoning to taste.
- Serve hot, garnished with fresh parsley.
