Ingredients

  • Canned chickpeas - 1 can (400g)
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Bay leaf - 1
  • Fresh spinach - 100g
  • Lemon - 1, juiced
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, garlic, carrot, and celery, and sauté for 5-7 minutes until the vegetables are softened.
  3. Stir in the ground cumin and paprika, cooking for another 1-2 minutes until fragrant.
  4. Add the canned chickpeas (drained and rinsed), vegetable broth, salt, black pepper, and bay leaf to the pot.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes.
  6. Remove the bay leaf, and stir in the fresh spinach until wilted.
  7. Add the lemon juice, and adjust seasoning to taste.
  8. Serve hot, garnished with fresh parsley.
