  • cooked chickpeas - 240 grams

  • red onion - 2 tablespoons, finely chopped
  • carrot - 1 medium, grated
  • vegan mayonnaise - 3 tablespoons
  • Dijon mustard - 1 teaspoon
  • lemon juice - 1 tablespoon
  • salt - 1/4 teaspoon
  • black pepper - 1/4 teaspoon
  • whole grain bread - 4 slices
  • leafy greens (e.g., lettuce or spinach) - 1 cup

Steps

  1. In a mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth but still slightly chunky.
  2. Add the finely chopped celery, red onion, grated carrot, vegan mayonnaise, Dijon mustard, lemon juice, salt, and black pepper to the mashed chickpeas. Mix thoroughly until well combined.
  3. Toast the whole grain bread slices if desired.
