  • Red bell pepper - 1/2 cup (50g), finely chopped
  • Red onion - 1/4 cup (30g), finely chopped
  • Dijon mustard - 1 tablespoon (15g)
  • Mayonnaise - 2 tablespoons (30g)
  • Lemon juice - 1 tablespoon (15ml)
  • Salt - 1/4 teaspoon (1.5g), or to taste
  • Black pepper - 1/4 teaspoon (1g), or to taste
  • Whole grain bread - 4 slices
  • Fresh spinach - 1 cup (30g), for serving

Steps

  1. In a mixing bowl, mash the drained chickpeas with a fork until slightly chunky.
  2. Add the chopped celery, red bell pepper, and red onion to the mashed chickpeas.
  3. In a separate small bowl, whisk together the Dijon mustard, mayonnaise, lemon juice, salt, and black pepper until smooth.
  4. Pour the dressing over the chickpea mixture and stir until well combined.
  5. Toast the slices of whole grain bread until golden brown.
  6. To assemble, spread the chickpea salad mixture evenly onto two slices of toasted bread, then top with fresh spinach and cover with the remaining slices of bread.
