- Mayonnaise - 2 tablespoons (30g)
- Lemon juice - 1 tablespoon (15ml)
- Salt - 1/4 teaspoon (1.5g), or to taste
- Black pepper - 1/4 teaspoon (1g), or to taste
- Whole grain bread - 4 slices
- Fresh spinach - 1 cup (30g), for serving
Steps
- In a mixing bowl, mash the drained chickpeas with a fork until slightly chunky.
- Add the chopped celery, red bell pepper, and red onion to the mashed chickpeas.
- In a separate small bowl, whisk together the Dijon mustard, mayonnaise, lemon juice, salt, and black pepper until smooth.
