Chickpea Quinoa Burger

- cooked quinoa - 1/2 cup
- canned chickpeas - 1 cup, drained and rinsed
- red onion - 1/4 cup, finely chopped
- garlic - 2 cloves, minced
- carrot - 1/4 cup, grated
- fresh parsley - 2 tablespoons, chopped
- ground cumin - 1 teaspoon
- ground coriander - 1/2 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- flaxseed meal - 1 tablespoon
- water - 2.5 tablespoons
- oats - 1/4 cup, ground into flour
- olive oil - 2 tablespoons (for cooking)
- whole grain burger buns - 2
- lettuce - 2 leaves
- tomato - 1, sliced
- avocado - 1/2, sliced
Steps
- In a large bowl, mash the chickpeas with a fork until mostly smooth but still slightly chunky.
- Add the cooked quinoa, chopped red onion, minced garlic, grated carrot, chopped parsley, ground cumin, ground coriander, salt, and black pepper to the bowl. Mix well to combine.
- In a small bowl, mix the flaxseed meal with water and let it sit for 5 minutes to thicken.
- Add the flaxseed mixture to the chickpea mixture along with the ground oats. Stir until everything is well combined.
- Form the mixture into two patties of equal size.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for 5-6 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, toast the burger buns in a separate pan or toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the quinoa-chickpea patty, tomato slices, and avocado slices. Top with the other half of the bun.
