Ingredients

  • Canned chickpeas - 240 grams (1 can)
  • All-purpose flour - 50 grams (1/3 cup)
  • Fresh parsley - 15 grams (1/2 cup, chopped)
  • Green onion - 30 grams (2 stalks, finely chopped)
  • Garlic - 2 cloves (minced)
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Baking powder - 1/2 teaspoon
  • Egg - 1 large
  • Olive oil - for frying

Steps

  1. Drain and rinse the canned chickpeas, then mash them in a mixing bowl until mostly smooth with some chunks remaining.
  2. Add the flour, chopped parsley, green onion, minced garlic, cumin, coriander, salt, black pepper, baking powder, and egg to the mashed chickpeas.
  3. Mix all the ingredients until well combined, then let the mixture rest for 10 minutes.
  4. Heat olive oil in a frying pan over medium heat.
  5. Scoop about 2 tablespoons of the chickpea mixture and form it into a small patty.
  6. Carefully place the patty into the hot oil, and fry for 3-4 minutes on each side or until golden brown and crispy.
  7. Repeat with the remaining mixture, adding more oil as needed.
  8. Once cooked, place the fritters on a paper towel to drain excess oil.
  9. Serve hot with a side of tahini sauce or yogurt dip.
