- Canned chickpeas - 240 grams (1 can)
- All-purpose flour - 50 grams (1/3 cup)
- Fresh parsley - 15 grams (1/2 cup, chopped)
- Green onion - 30 grams (2 stalks, finely chopped)
- Garlic - 2 cloves (minced)
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Baking powder - 1/2 teaspoon
- Egg - 1 large
- Olive oil - for frying
Steps
- Drain and rinse the canned chickpeas, then mash them in a mixing bowl until mostly smooth with some chunks remaining.
- Add the flour, chopped parsley, green onion, minced garlic, cumin, coriander, salt, black pepper, baking powder, and egg to the mashed chickpeas.
- Mix all the ingredients until well combined, then let the mixture rest for 10 minutes.
- Heat olive oil in a frying pan over medium heat.
- Scoop about 2 tablespoons of the chickpea mixture and form it into a small patty.
- Carefully place the patty into the hot oil, and fry for 3-4 minutes on each side or until golden brown and crispy.
- Repeat with the remaining mixture, adding more oil as needed.
- Once cooked, place the fritters on a paper towel to drain excess oil.
- Serve hot with a side of tahini sauce or yogurt dip.
