  • Coconut milk - 200ml
  • Vegetable broth - 250ml
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Fresh ginger - 1 inch, grated
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Spinach - 100g, fresh
  • Curry powder - 1 tablespoon
  • Cumin - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
