Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Coconut milk - 200 ml
  • Diced tomatoes - 200 grams, canned or fresh
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Curry powder - 2 tablespoons
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Spinach - 100 grams, fresh or frozen
  • Salt - to taste
  • Black pepper - to taste
  • Cheddar cheese - 100 grams, shredded (optional)
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  4. Add the curry powder, cumin, turmeric, salt, and black pepper, cooking for an additional minute to toast the spices.
  5. Incorporate the diced tomatoes and coconut milk, bringing the mixture to a simmer. Allow it to cook for 5-7 minutes to thicken slightly.
  6. Add the drained chickpeas and spinach to the skillet, stirring well to combine all ingredients. Cook for another 3-5 minutes until the spinach wilts.
  7. Transfer the chickpea mixture to a baking dish and top with shredded cheddar cheese if using.
  8. Bake in the preheated oven for 20-25 minutes until bubbly and golden on top.
  9. Remove from the oven, garnish with fresh cilantro, and serve hot.
