Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
- Add the curry powder, cumin, turmeric, salt, and black pepper, cooking for an additional minute to toast the spices.
- Incorporate the diced tomatoes and coconut milk, bringing the mixture to a simmer. Allow it to cook for 5-7 minutes to thicken slightly.
- Add the drained chickpeas and spinach to the skillet, stirring well to combine all ingredients. Cook for another 3-5 minutes until the spinach wilts.
- Transfer the chickpea mixture to a baking dish and top with shredded cheddar cheese if using.
