  • Lentils - 1/2 cup (100g), cooked
  • Fresh spinach - 2 cups (60g), chopped
  • Coconut milk - 1 cup (240ml)
  • Onion - 1 medium (150g), finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch piece, grated
  • Tomatoes - 1 medium (150g), diced
  • Curry powder - 1 tablespoon (15g)
  • Turmeric - 1/2 teaspoon (2g)
  • Cumin - 1/2 teaspoon (2g)
  • Olive oil - 1 tablespoon (15ml)
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon (15ml), for garnish

Steps

  1. In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger to the pan, and sauté for another 1-2 minutes until fragrant.
  3. Stir in the diced tomatoes, curry powder, turmeric, and cumin. Cook for about 3-4 minutes until the tomatoes soften.
  4. Add the cooked chickpeas and lentils to the pan, stirring to combine with the spices and vegetables.
  5. Pour in the coconut milk and bring the mixture to a gentle simmer. Cook for 10 minutes to allow the flavors to meld.
  6. Add the chopped spinach and cook for an additional 5 minutes until the spinach is wilted and tender.
  7. Season with salt and black pepper to taste. Remove from heat, and drizzle with lemon juice before serving.
