Ingredients

  • Chickpeas - 1 cup, cooked
  • Lentils - 1/2 cup, dry
  • Fresh spinach - 2 cups, chopped
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Coconut milk - 1 cup
  • Vegetable broth - 1 cup
  • Olive oil - 1 tablespoon
  • Curry powder - 2 teaspoons
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Cilantro - for garnish

Steps

  1. Rinse the lentils under cold water and combine them with 2 cups of water in a pot. Bring to a boil, then reduce heat and simmer for about 15-20 minutes until tender.
  2. While the lentils are cooking, heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and grated ginger to the skillet and cook for another minute until fragrant.
  4. Stir in the curry powder and cumin, cooking for an additional minute to release the spices' aroma.
  5. Add the cooked chickpeas, chopped spinach, coconut milk, and vegetable broth to the skillet. Stir well and bring to a simmer.
  6. Once the lentils are cooked, drain them and add to the skillet mixture. Stir to combine and let cook for another 5-7 minutes until everything is heated through.
  7. Season with salt, black pepper, and lemon juice. Adjust seasoning to taste.
  8. Serve hot, garnished with fresh cilantro.
