Ingredients

  • Chicken breast - 200 grams
  • Zucchini - 2 medium (about 300 grams)
  • Chicken broth - 500 ml
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, diced
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Pepper - to taste
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
  2. Add minced garlic and sauté for an additional minute until fragrant.
  3. Add the chicken breast to the pot, followed by the chicken broth, thyme, bay leaf, salt, and pepper. Bring to a boil.
  4. Reduce heat to simmer and cook for 15 minutes, or until the chicken is cooked through.
  5. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  6. Spiralize the zucchini to create zoodles and add them to the soup. Cook for an additional 5 minutes until the zoodles are tender.
  7. Remove the bay leaf, taste, and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
