- Chicken breast - 200 grams
- Zucchini - 2 medium (about 300 grams)
- Chicken broth - 500 ml
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, diced
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Pepper - to taste
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Add minced garlic and sauté for an additional minute until fragrant.
- Add the chicken breast to the pot, followed by the chicken broth, thyme, bay leaf, salt, and pepper. Bring to a boil.
- Reduce heat to simmer and cook for 15 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Spiralize the zucchini to create zoodles and add them to the soup. Cook for an additional 5 minutes until the zoodles are tender.
