Ingredients

  • Chicken breast - 2 pieces (about 150g each)
  • All-purpose flour - 1/2 cup (60g)
  • Eggs - 2 large
  • Breadcrumbs (preferably panko) - 1 cup (100g)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Garlic powder - 1/4 teaspoon
  • Vegetable oil (for frying) - 1/2 cup (120ml)
  • Fresh lemon wedges - for serving

Steps

  1. Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thickness using a meat mallet.
  2. Set up a breading station: in one shallow dish, place the flour mixed with salt, black pepper, paprika, and garlic powder; in a second dish, beat the eggs; and in a third dish, place the breadcrumbs.
  3. Dredge each chicken breast first in the flour mixture, shaking off excess, then dip into the beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.
  4. In a large skillet, heat the vegetable oil over medium-high heat until shimmering.
  5. Carefully add the breaded chicken breasts to the skillet, cooking for about 4-5 minutes on each side or until golden brown and cooked through.
  6. Remove the schnitzels from the skillet and place them on a paper towel-lined plate to drain excess oil.
  7. Serve hot with fresh lemon wedges for squeezing over the schnitzels.
