- Eggs - 2 large
- Breadcrumbs (preferably panko) - 1 cup (100g)

- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Garlic powder - 1/4 teaspoon
- Vegetable oil (for frying) - 1/2 cup (120ml)
- Fresh lemon wedges - for serving
Steps
- Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thickness using a meat mallet.
- Set up a breading station: in one shallow dish, place the flour mixed with salt, black pepper, paprika, and garlic powder; in a second dish, beat the eggs; and in a third dish, place the breadcrumbs.
- Dredge each chicken breast first in the flour mixture, shaking off excess, then dip into the beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.
- In a large skillet, heat the vegetable oil over medium-high heat until shimmering.
- Carefully add the breaded chicken breasts to the skillet, cooking for about 4-5 minutes on each side or until golden brown and cooked through.
- Remove the schnitzels from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve hot with fresh lemon wedges for squeezing over the schnitzels.
