- Chicken breast - 300 grams, cut into bite-sized pieces
- Coconut milk - 60 ml
- Soy sauce - 2 tablespoons
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Garlic powder - 1 teaspoon
- Ginger powder - 1 teaspoon
- Lime juice - 1 tablespoon
- Honey - 1 teaspoon
- Peanut butter - 2 tablespoons
- Cilantro - for garnish
- Skewers - 4 (soaked in water if wooden)
Steps
- In a bowl, combine coconut milk, soy sauce, ground coriander, ground cumin, garlic powder, ginger powder, lime juice, and honey. Mix well to create the marinade.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
- While the chicken is marinating, prepare the peanut sauce by mixing peanut butter with a little warm water until smooth. You can adjust the consistency with more water if needed.
- Preheat the grill or grill pan over medium heat.
- Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Serve the chicken skewers hot with the peanut sauce on the side for dipping, and garnish with fresh cilantro.
