Ingredients

  • Chicken breast - 300 grams, cut into bite-sized pieces
  • Coconut milk - 60 ml
  • Soy sauce - 2 tablespoons
  • Ground coriander - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Ginger powder - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Honey - 1 teaspoon
  • Peanut butter - 2 tablespoons
  • Cilantro - for garnish
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a bowl, combine coconut milk, soy sauce, ground coriander, ground cumin, garlic powder, ginger powder, lime juice, and honey. Mix well to create the marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  3. While the chicken is marinating, prepare the peanut sauce by mixing peanut butter with a little warm water until smooth. You can adjust the consistency with more water if needed.
  4. Preheat the grill or grill pan over medium heat.
  5. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Serve the chicken skewers hot with the peanut sauce on the side for dipping, and garnish with fresh cilantro.
