  • Ginger - 1 teaspoon, grated
  • Curry powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Peanut butter - 2 tablespoons
  • Water - 2 tablespoons
  • Chili flakes - 1/4 teaspoon (optional)
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. Cut the chicken breast into bite-sized pieces and place them in a bowl.
  2. In a separate bowl, mix coconut milk, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, curry powder, salt, and black pepper to create the marinade.
  3. Pour the marinade over the chicken pieces, ensuring they are well-coated. Cover and refrigerate for at least 15 minutes.
  4. While the chicken marinates, prepare the peanut dipping sauce by mixing peanut butter, water, and chili flakes in a small bowl until smooth. Adjust the consistency with more water if needed.
  5. Preheat the grill or grill pan over medium-high heat.
  6. Thread the marinated chicken pieces onto the soaked skewers.
  7. Grill the skewers for about 5-7 minutes on each side or until the chicken is cooked through and has nice grill marks.
