- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Onion - 1 medium, diced
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cilantro - 2 tablespoons, chopped (optional)
- Sour cream - for serving (optional)
- Salsa - for serving (optional)
Steps
- Heat the olive oil in a skillet over medium heat. Add the diced onion and bell peppers, sautéing until they are soft, about 5 minutes.
- Stir in the shredded chicken, cumin, paprika, salt, and black pepper, cooking for an additional 2-3 minutes until heated through.
- Place one tortilla in the skillet, and sprinkle half of the shredded cheese evenly over one half of the tortilla.
- Spoon half of the chicken and vegetable mixture over the cheese, then fold the tortilla in half.
- Cook for about 3-4 minutes on one side until golden brown, then carefully flip and cook for another 3-4 minutes on the other side until the cheese is melted and the tortilla is crispy.
- Remove the quesadilla from the skillet and let it cool for a minute before slicing into wedges.
- Repeat with the second tortilla and remaining ingredients.
- Serve warm with sour cream and salsa on the side, garnished with chopped cilantro if desired.
