  • Chicken breast - 200 grams, cooked and shredded
  • Whole wheat tortillas - 2 large (10-inch)
  • Shredded cheese (cheddar or Monterey Jack) - 150 grams
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Onion - 1 medium, diced
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro - 2 tablespoons, chopped (optional)
  • Sour cream - for serving (optional)
  • Salsa - for serving (optional)

Steps

  1. Heat the olive oil in a skillet over medium heat. Add the diced onion and bell peppers, sautéing until they are soft, about 5 minutes.
  2. Stir in the shredded chicken, cumin, paprika, salt, and black pepper, cooking for an additional 2-3 minutes until heated through.
  3. Place one tortilla in the skillet, and sprinkle half of the shredded cheese evenly over one half of the tortilla.
  4. Spoon half of the chicken and vegetable mixture over the cheese, then fold the tortilla in half.
  5. Cook for about 3-4 minutes on one side until golden brown, then carefully flip and cook for another 3-4 minutes on the other side until the cheese is melted and the tortilla is crispy.
  6. Remove the quesadilla from the skillet and let it cool for a minute before slicing into wedges.
  7. Repeat with the second tortilla and remaining ingredients.
  8. Serve warm with sour cream and salsa on the side, garnished with chopped cilantro if desired.
