Ingredients

  • Boneless, skinless chicken breasts - 2 (about 300g)
  • All-purpose flour - 1/4 cup (30g)
  • Olive oil - 2 tablespoons (30ml)
  • Unsalted butter - 1 tablespoon (14g)
  • Garlic, minced - 2 cloves
  • Chicken broth - 1/2 cup (120ml)
  • Fresh lemon juice - 1/4 cup (60ml)
  • Capers - 2 tablespoons (30g)
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by placing the chicken breasts between two pieces of plastic wrap and gently pound them to an even thickness of about 1.5 cm.
  2. Season both sides of the chicken breasts with salt and black pepper, then dredge them in the flour, shaking off any excess.
  3. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for 4-5 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the chicken broth and lemon juice, scraping the bottom of the skillet to deglaze. Stir in the capers and bring the sauce to a simmer.
  6. Return the chicken to the skillet and cook for an additional 2-3 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  7. Garnish with chopped parsley before serving, and enjoy your Chicken Piccata with a side of steamed vegetables or whole-grain pasta.
