Ingredients
- Gluten-free pasta - 200 grams
- Chicken breast - 250 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1 teaspoon
- Olive oil - 2 tablespoons
- Marinara sauce - 200 grams
- Mozzarella cheese - 100 grams, shredded
- Parmesan cheese - 30 grams, grated
- Fresh basil - a handful, chopped (for garnish)
Steps
- Bring a large pot of salted water to a boil. Add gluten-free pasta and cook according to package instructions until al dente. Drain and set aside.
- While the pasta cooks, season the chicken breast with salt, black pepper, and garlic powder on both sides.
- In a large skillet, heat olive oil over medium heat. Add the seasoned chicken and cook for about 5-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and let rest for a few minutes before slicing.
- In the same skillet, add the marinara sauce and bring to a simmer. Add the cooked pasta and toss to combine, ensuring the pasta is well coated in the sauce.
- Slice the cooked chicken and gently mix it into the pasta and sauce mixture.
- Sprinkle the shredded mozzarella cheese and grated Parmesan cheese over the top. Cover the skillet and let it cook on low heat for about 3-5 minutes, or until the cheese has melted.
- Serve hot, garnished with chopped fresh basil.
