Ingredients

  • Chicken breast - 2 (about 200g each)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • All-purpose flour - 1/2 cup
  • Egg - 1 large
  • Breadcrumbs - 1 cup
  • Parmesan cheese - 1/4 cup, grated
  • Olive oil - 2 tablespoons
  • Marinara sauce - 1 cup
  • Mozzarella cheese - 1/2 cup, shredded
  • Fresh basil - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. Set up a breading station: place flour in one shallow dish, beat the egg in a second dish, and mix breadcrumbs with grated Parmesan cheese in a third dish.
  4. Dredge each chicken breast in flour, shaking off excess, dip in the beaten egg, and finally coat with the breadcrumb mixture, pressing gently to adhere.
  5. In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for 4-5 minutes on each side until golden brown.
  6. Transfer the chicken to a baking dish. Pour marinara sauce over each breast and sprinkle shredded mozzarella cheese on top.
  7. Bake in the preheated oven for 10-12 minutes or until the cheese is bubbly and golden.
  8. Remove from the oven and garnish with fresh basil before serving.
