- Gluten-free egg noodles - 100 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Chicken broth - 750 ml
- Olive oil - 1 tablespoon
- Dried thyme - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped
Steps
- Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sautéing until onion is translucent, about 3-4 minutes.
- Add diced carrots and celery, cooking for another 5 minutes until they begin to soften.
- Cut the chicken breast into bite-sized pieces and add it to the pot, cooking until no longer pink, about 5-7 minutes.
- Pour in the chicken broth, then add the dried thyme, salt, and black pepper. Bring to a gentle boil.
- Once boiling, add the gluten-free egg noodles and cook according to package instructions, usually around 6-8 minutes.
- Once the noodles are cooked, remove the pot from heat and stir in the fresh parsley.
