Ingredients

  • Gluten-free egg noodles - 100 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Chicken broth - 750 ml
  • Olive oil - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sautéing until onion is translucent, about 3-4 minutes.
  2. Add diced carrots and celery, cooking for another 5 minutes until they begin to soften.
  3. Cut the chicken breast into bite-sized pieces and add it to the pot, cooking until no longer pink, about 5-7 minutes.
  4. Pour in the chicken broth, then add the dried thyme, salt, and black pepper. Bring to a gentle boil.
  5. Once boiling, add the gluten-free egg noodles and cook according to package instructions, usually around 6-8 minutes.
  6. Once the noodles are cooked, remove the pot from heat and stir in the fresh parsley.
