Ingredients

  • Chicken breasts - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Chicken broth - 1 cup
  • Almonds - 30 grams, toasted
  • Dark chocolate (70% cocoa) - 30 grams
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Oregano - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until soft and translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in the tomato paste, chicken broth, toasted almonds, dark chocolate, cinnamon, cumin, oregano, salt, and pepper. Bring the mixture to a simmer, stirring occasionally.
  4. Add the chicken breasts to the skillet, ensuring they are coated in the sauce. Cover and simmer for 25-30 minutes, or until the chicken is cooked through and tender.
  5. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  6. Return the sauce to low heat and blend until smooth using an immersion blender or by transferring to a regular blender (be careful with hot liquids). Adjust seasoning if necessary.
  7. Serve the sliced chicken topped with the mole sauce and garnish with fresh cilantro.
