Ingredients

  • Chicken breasts - 2 (about 300g each)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Almond flour - 1/4 cup
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Mushrooms (sliced) - 200g
  • Garlic (minced) - 2 cloves
  • Marsala wine - 1/2 cup
  • Chicken broth - 1/2 cup
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. Dredge each chicken breast in almond flour, shaking off the excess.
  3. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, melt the butter and add the sliced mushrooms. Sauté for 4-5 minutes until the mushrooms are browned and tender.
  5. Add minced garlic to the mushrooms and cook for an additional minute until fragrant.
  6. Pour in the Marsala wine and chicken broth, scraping the bottom of the skillet to deglaze. Bring to a simmer and cook for about 5 minutes until the sauce slightly thickens.
  7. Return the chicken breasts to the skillet, spoon the sauce over them, and cook for another 2-3 minutes to heat through.
  8. Garnish with chopped fresh parsley before serving.
