- Chicken breasts - 2 (about 300g each)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Almond flour - 1/4 cup
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Mushrooms (sliced) - 200g
- Garlic (minced) - 2 cloves
- Marsala wine - 1/2 cup
- Chicken broth - 1/2 cup
- Fresh parsley (chopped) - 2 tablespoons
Steps
- Season the chicken breasts with salt and black pepper on both sides.
- Dredge each chicken breast in almond flour, shaking off the excess.
- In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, melt the butter and add the sliced mushrooms. Sauté for 4-5 minutes until the mushrooms are browned and tender.
- Add minced garlic to the mushrooms and cook for an additional minute until fragrant.
- Pour in the Marsala wine and chicken broth, scraping the bottom of the skillet to deglaze. Bring to a simmer and cook for about 5 minutes until the sauce slightly thickens.
- Return the chicken breasts to the skillet, spoon the sauce over them, and cook for another 2-3 minutes to heat through.
- Garnish with chopped fresh parsley before serving.
