Ingredients

  • Chicken breasts - 2 pieces (200g each)
  • Unsalted butter - 100g, softened
  • Fresh parsley - 2 tablespoons, finely chopped
  • Fresh dill - 1 tablespoon, finely chopped
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • All-purpose flour - 1/2 cup
  • Egg - 1 large, beaten
  • Breadcrumbs - 1 cup
  • Oil for frying - as needed

Steps

  1. In a bowl, mix the softened butter with parsley, dill, garlic, lemon juice, salt, and black pepper until well combined. Shape the mixture into a log, wrap in plastic wrap, and freeze for about 15 minutes.
  2. While the butter is chilling, preheat the oven to 180°C (350°F).
  3. Take the chicken breasts and gently pound them between two pieces of plastic wrap until about 1 cm thick.
  4. Remove the herb butter from the freezer and cut it into two equal pieces. Place a piece in the center of each chicken breast.
  5. Fold the sides of the chicken over the butter and roll it up tightly, securing the ends with toothpicks if necessary.
  6. Dredge each chicken roll in flour, shaking off excess, then dip in the beaten egg, and finally coat with breadcrumbs.
  7. Heat oil in a frying pan over medium heat. Fry each chicken roll for about 4-5 minutes on each side until golden brown.
  8. Transfer the chicken to a baking dish and bake in the preheated oven for an additional 15-20 minutes, until cooked through.
  9. Remove from the oven, let rest for a few minutes, then serve.
