Ingredients

  • Cooked brown rice - 2 cups
  • Chicken breast, diced - 200 grams
  • Eggs - 2 large
  • Green peas - 1/2 cup
  • Carrots, diced - 1/2 cup
  • Green onions, chopped - 2 stalks
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large skillet or wok over medium-high heat.
  2. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
  4. Add the diced carrots and cook for 3-4 minutes until they begin to soften.
  5. Push the vegetables to the side of the skillet and crack the eggs into the center, scrambling them until fully cooked.
  6. Add the cooked brown rice, green peas, and the cooked chicken back into the skillet.
  7. Pour the soy sauce and sesame oil over the mixture and stir well to combine all ingredients.
  8. Add chopped green onions, and season with salt and black pepper to taste. Stir-fry for another 2-3 minutes until heated through.
