Ingredients
- Cooked brown rice - 2 cups
- Chicken breast, diced - 200 grams
- Eggs - 2 large
- Green peas - 1/2 cup
- Carrots, diced - 1/2 cup
- Green onions, chopped - 2 stalks
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a large skillet or wok over medium-high heat.
- Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
- Add the diced carrots and cook for 3-4 minutes until they begin to soften.
- Push the vegetables to the side of the skillet and crack the eggs into the center, scrambling them until fully cooked.
- Add the cooked brown rice, green peas, and the cooked chicken back into the skillet.
- Pour the soy sauce and sesame oil over the mixture and stir well to combine all ingredients.
- Add chopped green onions, and season with salt and black pepper to taste. Stir-fry for another 2-3 minutes until heated through.
