- Chicken thighs - 400 grams, skinless and boneless
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Mushrooms - 150 grams, sliced
- All-purpose flour - 2 tablespoons
- Chicken broth - 250 milliliters
- Unsweetened almond milk - 100 milliliters
- Dried thyme - 1 teaspoon
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Heat the olive oil in a large skillet over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until the vegetables start to soften.
- Add the minced garlic and sliced mushrooms to the skillet and cook for an additional 5 minutes, stirring occasionally.
- Season the chicken thighs with salt and black pepper. Push the vegetables to the side of the skillet and add the chicken thighs. Brown the chicken on both sides for about 5 minutes.
- Sprinkle the flour over the chicken and vegetables, stirring to combine and cook for 1 minute to remove the raw flour taste.
- Pour in the chicken broth and almond milk, stirring well to combine. Add the dried thyme and bay leaf.
- Bring the mixture to a simmer, cover, and reduce the heat to low. Cook for 20-25 minutes, or until the chicken is cooked through and tender.
- Remove the bay leaf, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
