Ingredients

  • Chicken breast - 300 grams
  • Bell pepper (mixed colors) - 1 cup, sliced
  • Red onion - 1/2 cup, sliced
  • Olive oil - 2 tablespoons
  • Fajita seasoning - 1 tablespoon
  • Avocado - 1 medium, diced
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 1/4 cup, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Romaine lettuce - 2 cups, chopped

Steps

  1. Preheat a skillet over medium-high heat and add 1 tablespoon of olive oil.
  2. Season the chicken breast with fajita seasoning, salt, and pepper, then add it to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from skillet and let it rest before slicing.
  4. In the same skillet, add another tablespoon of olive oil and toss in the sliced bell peppers and red onion.
  5. Sauté the vegetables for about 5-6 minutes until they are tender and slightly charred.
  6. While the vegetables are cooking, prepare the avocado dressing by mashing the avocado in a bowl and mixing it with lime juice, chopped cilantro, salt, and pepper.
  7. Once the chicken has rested, slice it into strips.
  8. To assemble the bowls, place chopped romaine lettuce at the bottom, top with sautéed vegetables, sliced chicken, and a generous dollop of avocado dressing.
