- Chicken breast - 300 grams
- Bell pepper (mixed colors) - 1 cup, sliced
- Red onion - 1/2 cup, sliced
- Olive oil - 2 tablespoons
- Fajita seasoning - 1 tablespoon
- Avocado - 1 medium, diced
- Lime juice - 1 tablespoon
- Fresh cilantro - 1/4 cup, chopped
- Salt - to taste
- Black pepper - to taste
- Romaine lettuce - 2 cups, chopped
Steps
- Preheat a skillet over medium-high heat and add 1 tablespoon of olive oil.
- Season the chicken breast with fajita seasoning, salt, and pepper, then add it to the skillet.
- Cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from skillet and let it rest before slicing.
- In the same skillet, add another tablespoon of olive oil and toss in the sliced bell peppers and red onion.
- Sauté the vegetables for about 5-6 minutes until they are tender and slightly charred.
- While the vegetables are cooking, prepare the avocado dressing by mashing the avocado in a bowl and mixing it with lime juice, chopped cilantro, salt, and pepper.
- Once the chicken has rested, slice it into strips.
- To assemble the bowls, place chopped romaine lettuce at the bottom, top with sautéed vegetables, sliced chicken, and a generous dollop of avocado dressing.
